I love cake. But what I don’t love is making it, waiting for it to bake then waiting for it to cool, then making the icing… and you get the point. Basically I want cake and I want it NOW! Mugcake’s are the perfect answer to this, but after trying several different recipes all of which resulted tragically, I’ve now discovered the perfect mixture and I’m going to share it will all you lucky people today!
Ingredients
(Makes 1 LARGE mugcake…Split into two if you only have small mugs.)
1 tablespoon butter
1 medium egg
1 tablespoon milk
1/2 teaspoon vanilla extract
1/8 cup granulated sugar
3 tablespoons self raising flour
Pinch of salt
Unlimited rainbow stars (feel free to swap this for chocolate chips, fruit or whatever else you like in a cake!)
Instructions
-Melt butter for 10 seconds in microwave.
-Add egg, milk, vanilla & sugar. Mix together.
-Add flour & salt and whisk until smooth.
-Add rainbow stars and mix until you have your desired amount.
-Microwave 1min 30secs or until cake has risen. (I put a skewer in it and if it comes out clean you know it done).
-Sit back and enjoy your incredible (and quick!) mugcake!

I am on a roll of mug cakes, they really are the quick fix when craving something sweet. I usually just try and make them and hope for the best, usually works out but I am glad I found your recipe, definitely trying it.
